services: lsh: Change #:initialize? to default to #t. 

* gnu/services/ssh.scm (lsh-service): Change #:initialize? to default
  to #t.
* doc/guix.texi (Using the Configuration System): Remove #:initialize? #t
  from example.
  (Networking Services): Adjust accordingly.
