tests: Make sure /var/guix/gcroots/profiles is a valid symlink.

* gnu/build/install.scm (directives): Add /var/guix/gcroots/profiles
symlink.
* gnu/tests/base.scm (run-basic-test)["/var/guix/gcroots/profiles is a
valid symlink"]: New test.
