edit: Honor $VISUAL.

Suggested by Andreas Enge <andreas@enge.fr>.

* guix/scripts/edit.scm (%editor): Honor 'VISUAL' before 'EDITOR'.
  (show-help): Adjust accordingly.
* doc/guix.texi (Invoking guix edit): Likewise.
