doc: Use Screen and OpenSSH in the bare-bones example.

* gnu/system/examples/bare-bones.tmpl (packages): Remove TCPDUMP; add
SCREEN and OPENSSH.
* doc/guix.texi (Using the Configuration System): Adjust explanation
accordingly.
