gnu: dosfstools: Enable compat symlinks. 

Enable compatibility symlinks to provide commands such as `mkfs.vfat`.

* gnu/packages/disk.scm (dosfstools)[arguments]: Pass
"--enable-compat-symlinks" to configure.
