gnu: certbot: Add support for manual plugin. 

* gnu/services/certbot.scm (certificate-configuration): Add challenge,
auth-hook and cleanup-hook fields.
(certbot-command): Use them.
* doc/guix.texi (Certificate Services): Document them.
