doc: Fix dangling references in the 'sh-symlink' monad example.

* doc/guix.texi (The Store Monad): Reintroduce 'mlet' in 'sh-symlink'
  example.  Move the simplified version below.  Explain that the 'store'
  parameter is threaded.
